FROZEN BERRY SMOOTHIE

INGREDIENTS
1 banana
1 cup berries
2 cans of coconut milk
1/4 cup chia seeds
1 tsp vanilla essence

METHOD
Blend together a banana, and 1 cup coconut milk, and 1/2 cup berries and place in a plastic container overnight (or roughly 7-8 hours). This will make your smoothie base.
Next, add in a different mixing bowl 1/4 cup chia seeds and 1 can coconut milk, leaving in a bowl overnight in the fridge. This will make your chia layer.
Place a can of coconut cream in the fridge upside down overnight. This will make your coconut whip.
The next day, blend together 1/4 cup blueberries to make a puree. mix this with your chia layer. Then, take out your smoothie base, and re-blend it to make it a smoother consistency.
Take out the can of coconut cream, turning the right way up and spooning out the top layer of liquid- using only the bottom hardened layer. Blend this in a mixer, or using hand beaters for 3-5 minutes until it gets soft peaks, add in vanilla essence to taste.
Layer in a cup the cream, chia, and smoothie, and top with additional 1/4 cup of fresh berries.
NOTE: if you are not a fan of coconut whipped cream, you can use regular cream- noting it does make it a bit sweeter.
